Gouda Burgers with Pickled Radish and Shallot
A 30-minute skillet burger balances rich smoked Gouda and juicy beef with quick-pickled radish, shallot, and a sharp Dijon mayonnaise.

These burgers rely on a quick pickle for brightness rather than a long list of toppings. Thin radish and shallot soften slightly in vinegar while keeping enough crunch to contrast with melted smoked Gouda and a juicy beef patty.
Start with the quick pickle
Slice the radishes and shallot as thinly as you can so their brief time in vinegar still gives them a tangy edge. Toss them once or twice while they stand, then drain them well before assembly; a little brine is useful for flavor, but too much will soften a toasted bun.
The pickle takes about 15 minutes, which fits neatly into the time needed to mix the spread and shape the patties. The slices turn a little translucent at the edges but remain crisp in the center.
Keep the patties loose
Divide the beef evenly and shape each portion just until it holds together. A shallow center dimple helps the patty cook flatter, and salting just before cooking keeps the surface from becoming damp while the burgers wait.
Smoked Gouda contributes savory depth, so the beef needs only salt and black pepper. Leave the patties undisturbed until the first side is deeply browned and releases without tearing.

Wait for the crust to release
A patty that sticks is often telling you it needs another moment of contact. Give it time to form a crust rather than scraping it loose or pressing it down; the crust will release more cleanly when it is ready to turn.
If your skillet cannot hold four patties without crowding, sear them in batches and keep the first batch warm on a clean plate. Crowding lowers the pan temperature and makes it harder to brown the beef.
Use temperature for doneness
Thickness and pan heat affect timing, so use the clock as a guide and a thermometer for the endpoint. Insert an instant-read thermometer sideways into the center of a patty and cook ground beef to 160 F for a reliable safe finish.
Add the cheese during the final minute and cover briefly, giving the smoked Gouda time to soften without holding the patties over the heat longer than necessary.

Build just before serving
Resting the patties for three minutes lets the cooking settle while you drain the pickles. Spread the Dijon mayonnaise across the bun bottoms, then add the hot burgers and a generous share of the radish and shallot.
Serve promptly so the toasted bun stays sturdy and the quick-pickle remains bright. The sharp mustard and vinegar keep each bite lively against the beef and creamy cheese.
Gouda Burgers with Pickled Radish and Shallot
Ingredients
- • 1 1/2 lb 80/20 ground beef
- • 1 1/2 tsp kosher salt, divided
- • 1/2 tsp freshly ground black pepper
- • 4 oz smoked Gouda, cut into 4 slices
- • 4 hamburger buns
- • 4 medium radishes (about 4 oz), very thinly sliced
- • 1 small shallot, very thinly sliced
- • 1/3 cup distilled white vinegar
- • 1 tsp granulated sugar
- • 1 tbsp neutral oil
- • 2 tbsp mayonnaise
- • 2 tsp Dijon mustard
Method
Quick-pickle the radish and shallot
Whisk the distilled white vinegar, granulated sugar, and 1/2 tsp kosher salt in a small bowl until dissolved. Add the thinly sliced radishes and shallot, toss to coat, and leave them to pickle for at least 15 minutes, tossing once or twice.
Look for: The sugar and salt dissolve completely, and the radish edges begin to turn translucent as the pickle liquid reaches them.
Stir the Dijon mayonnaise
Stir the mayonnaise and Dijon mustard together in a small bowl until evenly pale and smooth, then set the spread aside while you shape the patties.
Look for: No streaks of mustard remain, and the mixture holds soft ridges from the spoon.
Shape and season the patties
Divide the ground beef into four equal portions of about 6 oz each and gently shape them into 3/4-inch-thick patties slightly wider than the buns, pressing a shallow dimple into each center. Season both sides with the remaining 1 tsp kosher salt and the black pepper just before cooking.
Look for: The patties hold together without being compacted, and each center has a visible shallow dimple.
Toast the buns and heat the skillet
Set a large skillet over medium heat and toast the buns cut-side down in batches until golden, about 1 minute; transfer them to a plate. Raise the heat to medium-high, add the neutral oil, and wait until it shimmers before adding the patties.
Look for: The bun interiors are lightly golden, and the oil runs freely across the skillet with a glossy shimmer.
Sear the first side
Lay the patties in the hot skillet with space between them and sear without pressing for about 4 minutes, until a deep brown crust forms and the patties release easily when nudged with a thin spatula.
Look for: The undersides are well browned, and the patties lift cleanly rather than tearing against the skillet.
Flip, melt the Gouda, and check
Flip each patty once and cook for about 2 minutes. Add a slice of smoked Gouda to each during the final minute, cover briefly to melt it, and use an instant-read thermometer inserted from the side to confirm the centers reach 160 F; continue cooking in short intervals if needed.
Look for: The Gouda is glossy and slumped over the patties, and every center reaches 160 F without a long press that squeezes out juices.
Rest and drain
Transfer the patties to a clean plate and rest them for 3 minutes. Meanwhile, lift the radish and shallot from their pickle liquid and let the excess drain back into the bowl so the toasted buns stay crisp.
Look for: The patties remain juicy as they rest, while the drained pickles look glossy but are not dripping.
Build the burgers
Spread the Dijon mayonnaise over the toasted bun bottoms, set one Gouda-topped patty on each, and divide the drained radish and shallot evenly over the cheese. Cap with the bun tops and serve while the patties are hot and the pickles are crisp.
Look for: Each burger has a visible layer of pink-white pickle slices over the melted cheese and a secure toasted top bun.
