General Tso Sauce
16 min · 8 2-tablespoon portions
Ingredients
□ 1/2 cup low-sodium chicken stock
□ 1/4 cup low-sodium soy sauce
□ 3 tbsp rice vinegar
□ 2 tbsp Shaoxing wine
□ 3 tbsp granulated sugar
□ 2 garlic cloves, finely grated
□ 1 tbsp finely grated fresh ginger
□ 3 dried red chiles, stems removed and broken in half
□ 1 tbsp neutral oil
□ 2 tsp cornstarch
□ 1 tbsp cold water
Directions
1. Whisk stock, soy, vinegar, Shaoxing wine, and sugar. Mix cornstarch with cold water until smooth.
2. Warm chiles in oil over medium-low. Add garlic and ginger; stir 15 to 20 seconds without browning.
3. Simmer the sauce base until rounded. Whisk in slurry gradually until glossy and lightly coating.
4. Rest briefly; thin with reserved stock by teaspoons if needed. Serve warm or cool and refrigerate.
Cook’s note: Stop thickening while the glaze still flows; it tightens slightly as it stands.
