Ensalada de Nopales (Mexican Cactus Salad)
Tender, rinsed nopales meet tomato, herbs, avocado, and salty queso fresco in a lightly dressed Mexican side salad.

Nopales stay distinct when diced evenly, cooked just until tender, and rinsed until the slick liquid is gone. Cooling them before dressing keeps the tomato and herbs fresh while the salty queso fresco remains balanced.
Rinse for a clean texture
Fresh nopales release a slick liquid as they cook, so the rinse is part of the texture work. A thorough rinse followed by a full drain keeps the final dressing bright and lightly clinging.
Use jarred nopales when needed
Jarred nopales make this salad available when fresh paddles are hard to find. Drain and rinse them before a brief simmer with the onion and garlic, then continue with the same cooling and tossing steps.

Keep the dressing light
Vinegar supplies a clean edge, while lime and Mexican oregano keep the dressing aromatic. Use only enough to coat the cactus and vegetables; the ripe tomato also contributes moisture.
Add the delicate finish
Avocado is folded in near the end so the cubes keep their shape. Crumbled queso fresco provides salty contrast, so taste the dressed vegetables with the cheese before serving.

Ensalada de Nopales (Mexican Cactus Salad)
Ingredients
- •
- • 1 small white onion, halved for simmering
- • 1/4 cup finely diced white onion
- • 1 garlic clove, smashed
- • 1 tsp kosher salt, divided
- • 8 cups water, for simmering
- • 2 medium ripe tomatoes, seeded and diced
- • 1/2 cup chopped fresh cilantro
- • 1 ripe avocado, cut into 1/2-inch cubes
- • 3 oz queso fresco, crumbled
- • 1 tbsp apple cider vinegar
- • 1 tbsp fresh lime juice
- • 1/2 tsp dried Mexican oregano, crushed
Method
Prepare the nopales
Trim the spines and tough edges from the fresh nopales, dice them into 1/2-inch pieces, and rinse; if using the jarred alternative, drain and rinse both 15-ounce jars instead.
Look for: Fresh pieces are evenly diced, or the jarred nopales are thoroughly rinsed and draining.
Simmer until tender
Bring the water to a simmer with the halved onion, smashed garlic, and 3/4 tsp salt. Add fresh nopales and simmer 10–12 minutes until tender but distinct; for the jarred branch, add both drained jars and simmer only 2 minutes to warm through.
Look for: Fresh nopales bend easily but hold their shape; jarred nopales are heated through without becoming soft.
Rinse and cool
Drain the cooked nopales well, rinse under cool running water until the slick liquid washes away, and drain again. Spread them on a tray to cool fully, or chill them for a cold salad.
Look for: The cactus feels clean rather than slippery, and no water pools beneath it.
Prepare the vegetables
Seed and dice the tomatoes, finely dice the raw white onion, chop the cilantro, and cube the avocado just before tossing. Crumble the queso fresco and keep it aside for the finish.
Look for: The vegetables are cut into pieces small enough to sit evenly with the diced cactus.
Mix the dressing
Stir the vinegar, lime juice, crushed Mexican oregano, and remaining 1/4 tsp salt in a small bowl until the salt dissolves. The dressing should taste bright enough to balance the salty queso fresco.
Look for: The oregano is fragrant and the dressing tastes lightly tart, not harsh.
Toss the salad
In a large bowl, combine the cooled nopales with tomatoes, raw onion, and cilantro. Pour in the dressing and toss until the pieces are lightly coated rather than sitting in a pool.
Look for: The vegetables are evenly distributed and the bottom of the bowl is not watery.
Finish gently
Fold in the avocado carefully so its cubes keep their shape, then scatter the crumbled queso fresco over the salad. Taste a bite with the cheese before deciding whether it needs more lime.
Look for: Avocado remains in distinct cubes, and the cheese is spread across the salad.
Chill or serve
Cover and chill for 20 minutes for a cool salad, or serve as soon as it reaches room temperature. Bring it to the table with tostadas or alongside grilled food.
Look for: The salad is cool but not watery, or has cooled fully to room temperature before serving.
