Elote and Guacamole Beef Burgers

43 min · 4 burgers

Ingredients

□ 1 1/2 lb 80/20 ground beef

□ 1 1/2 tsp kosher salt, divided

□ 1 tsp ground cumin

□ 1 1/2 tsp ancho chile powder, divided

□ 1/2 tsp freshly ground black pepper

□ 4 ears sweet corn, husked

□ 1 tbsp neutral oil

□ 1 ripe avocado

□ 2 medium limes, juiced and cut into wedges

□ 2 tbsp chopped fresh cilantro

□ 1 small garlic clove, finely grated

□ 4 burger buns

□ 4 tbsp softened unsalted butter

□ 1/3 cup Mexican crema

□ 1/2 cup crumbled cotija cheese

Directions

1. Mash avocado with lime, cilantro, garlic, and salt. Shape beef into four dimpled patties; season with cumin, chile, salt, and pepper.

2. Oil and grill corn over medium-high heat, turning until tender and charred in spots.

3. Grill patties, flipping once, to 160 F; rest 3 minutes. Brush corn with crema, coat with cotija, and dust with chile.

4. Butter and toast buns. Add guacamole, burgers, and cotija; serve with elote corn and lime wedges.

Cook’s note: Keep the patties loosely shaped so they stay tender as they brown.
