Diner Works Omelet
A classic diner-style omelet packs ham, bacon, sausage, vegetables, and sharp cheddar into soft, pale eggs that fold neatly and reach the table hot.

Ingredients
6 large eggs
2 tbsp whole milk
1/4 tsp kosher salt, divided
1/8 tsp ground black pepper, divided
1 slice thick-cut bacon
1 oz bulk breakfast sausage
1 oz cooked ham, finely diced
2 oz cremini mushrooms, finely diced
2 tbsp green bell pepper, finely diced
2 tbsp yellow onion, finely diced
2 tbsp tomato, seeded and finely diced
1/2 cup sharp cheddar cheese, shredded
2 tbsp unsalted butter
Equipment
Nonstick skillet · Mixing bowls · Flexible spatula · Paper towels · Sharp knife
Prepare the filling
01. Dice the ham and vegetables, shred the cheddar, and beat separate egg batches with milk and seasoning so the second omelet is ready to cook in sequence.
02. Cook bacon until crisp, crumble it, and drain off the extra fat while leaving a thin film in the skillet for the vegetables.
Cook and divide
03. Brown sausage in small crumbles until it reaches 160 F; drain it so the omelet filling stays compact.
04. Cook mushrooms, pepper, and onion until their moisture evaporates, then stir in tomato briefly and drain the vegetables.
Fold the omelets
05. Mix the vegetables with ham and cooked meats, then split the filling evenly; keep the cheese within reach for quick assembly.
06. Cook one egg batch in butter over medium-low heat, nudging set edges inward until glossy and softly set, then add half the filling and cheese and fold.
Finish and serve
07. Repeat with the second egg batch, remaining butter, filling, and cheese; fold while the eggs remain pale and tender.
08. Serve immediately with toast or breakfast potatoes if desired, since residual heat continues to set the eggs.
