Crispy Parmesan Frico Cups with Pear and Blue Cheese
53 min · 16 amuse-bouche portions
Ingredients
□ 2 cups finely grated Parmesan cheese
□ 1 tsp neutral oil
□ 1/3 cup walnut pieces
□ 1 medium firm-ripe pear
□ 1 tsp fresh lemon juice
□ 1/8 tsp freshly ground black pepper
□ 2 oz blue cheese, crumbled
Directions
1. Heat the oven and oil the inverted wells; toast walnuts until fragrant, then cool and chop.
2. Dice the pear and keep it dry. Measure the Parmesan into loose portions for even rounds.
3. Bake thin rounds until their edges turn golden; shape each while pliable with a spatula and heatproof gloves.
4. Cool cups until crisp. Toss pear with lemon and pepper just before filling.
5. Top each cup with pear, a little blue cheese, and toasted walnuts; serve right away.
Cook’s note: Shape frico while warm, but use a spatula and heatproof gloves to protect your hands.
