Crispy Fish Tacos with Cabbage and Lime Crema

Seasoned cod browns quickly in a skillet, then meets cool cabbage, tangy crema, and bright quick-pickled onion.

These tacos are built around contrast: seasoned cod browns quickly in a thin crisp coating while the cabbage stays cool and crunchy.

A tangy avocado-lime crema and quick-pickled red onion bring freshness without requiring a deep fryer or a long marinade.

Start with the onion

The red onion has just enough time in warm vinegar to soften its raw edge and turn bright. Starting it first lets the pickle develop while the cabbage and crema come together.

Light crispness without batter

A thin dusting of cornstarch helps the seasoned cod brown without a heavy coating. Patting the fish dry and leaving space in the skillet protects that crisp surface.

Keep the crema thick

Mashing the avocado with sour cream gives the crema enough body to cling to the fish and tortillas. Lime and cilantro lift the richness without making the mixture watery.

Assemble just before eating

Warm tortillas are easiest to fold while pliable, and a clean towel helps them hold heat as the fish finishes. Add the cabbage, crema, and pickled onion at the last moment so their textures stay distinct.

Avoid steaming the fish

If the cod releases water or its coating turns pasty, the pan is likely crowded or the fish was still damp. Cook smaller batches and let the skillet return to a shimmer before adding more pieces.

Crispy Fish Tacos with Cabbage and Lime Crema

4 servings
50 minutes total

Ingredients

  • •  1 1/2 lb cod fillets, cut into 1-inch strips
  • •  1 tsp chili powder
  • •  1/2 tsp ground cumin
  • •  1/2 tsp smoked paprika
  • •  1 tsp kosher salt, divided
  • •  1/4 tsp ground black pepper
  • •  2 tbsp cornstarch
  • •  2 tbsp neutral oil
  • •  1 small red onion, thinly sliced
  • •  1/3 cup distilled white vinegar
  • •  1 tsp granulated sugar
  • •  8 small corn tortillas
  • •  2 cups green cabbage, finely shredded
  • •  1 ripe avocado
  • •  1/3 cup sour cream
  • •  2 limes
  • •  1/3 cup fresh cilantro, chopped and divided
  • •  2 tsp hot sauce, for serving (optional)

Method

  1. Quick-pickle the onion

Place the sliced red onion in a heatproof bowl. Warm the vinegar, sugar, and 1/4 tsp kosher salt in a small saucepan until steaming, stirring to dissolve the sugar, then pour it over the onion and let it soften while you prepare the toppings.

Look for: The sugar dissolves and the onion is covered by the warm vinegar.

  2. Prepare the fresh toppings

Shred the cabbage finely and chop the cilantro. Cut one of the limes into wedges and reserve the other lime for the crema; keep the cabbage dry so it stays crisp in the tacos.

Look for: The cabbage is in thin shreds and the lime wedges are ready for serving.

  3. Make the avocado-lime crema

Mash the avocado with the sour cream, juice of one lime, and half the chopped cilantro until creamy but still thick. Season with 1/4 tsp kosher salt and cover the bowl while you cook the fish.

Look for: The crema is spoonable and tastes bright with lime.

  4. Season and coat the cod

Pat the cod strips very dry. Stir together the chili powder, cumin, smoked paprika, remaining 1/2 tsp kosher salt, and black pepper; season the fish, then dust it evenly with cornstarch.

Look for: The fish has a thin, even coating with no wet clumps of cornstarch.

  5. Pan-sear the fish

Heat the neutral oil in a wide skillet over medium-high heat until shimmering. Cook the fish in uncrowded batches for 2 to 3 minutes per side, turning once, until browned, opaque, and 145 F at the thickest pieces; transfer each batch to a clean plate.

Look for: The coating is golden, the fish flakes easily, and the thickest piece reaches 145 F.

  6. Warm the tortillas

Wipe excess oil from the skillet, then warm the tortillas in a dry skillet over medium heat for about 20 seconds per side, until pliable with a few toasted spots. Stack them under a clean towel to keep them warm.

Look for: The tortillas bend without cracking and remain warm under the towel.

  7. Assemble and serve

Divide the cabbage among the warm tortillas and add the seared fish. Spoon on avocado-lime crema, top with pickled onion and the remaining cilantro, and serve with lime wedges and optional hot sauce at the table.

Look for: Each taco has crisp cabbage, warm fish, crema, and a little pickled onion.
