Crispy Chickpea and Avocado Salad with Green Tahini

Warm, spice-roasted chickpeas meet cool crunchy greens, ripe avocado, and a lemony parsley-cilantro tahini that stays loose enough to drizzle.
Golden roasted chickpeas, avocado slices, romaine, and cucumber are finished with green tahini on a platter.

This salad gets its contrast from careful timing: chickpeas go into the oven first, while the greens and dressing come together as they brown. Add the chickpeas only after the romaine is lightly dressed so their roasted edges remain crisp.

Dry chickpeas before they meet oil

Rinsed chickpeas hold water in their creases, and that surface moisture works against browning. Rub them in a clean towel until they feel matte, remove loose skins, and give them room on the pan so the oven can dry and color their sides.

Make the tahini pourable

Tahini thickens as it blends with lemon and herbs, so cold water goes in gradually until the dressing falls from a spoon in a steady ribbon. Parsley and cilantro provide the green flavor; lemon keeps it lively, while a measured coating lets the salad stay fresh rather than heavy.

Dry seasoned chickpeas are spaced in one layer across a rimmed sheet pan before roasting.

Keep the greens crisp

Romaine and cucumber bring a cool crunch that balances the warm spiced chickpeas and creamy avocado. Drying the leaves after washing helps the thin tahini coating cling evenly instead of pooling at the bottom of the bowl.

Assemble at the last moment

Dress the greens lightly, lay the avocado over them, and scatter the hot chickpeas across the top. Keep extra dressing at the table for anyone who wants more, and serve promptly before the chickpeas soften.

Crispy Chickpea and Avocado Salad with Green Tahini

4 servings
50 minutes total

Ingredients

  • •  2 (15-oz) cans chickpeas, drained and rinsed
  • •  1 tbsp extra-virgin olive oil
  • •  3/4 tsp kosher salt, divided
  • •  1 tsp ground cumin
  • •  1/2 tsp ground coriander
  • •  1/4 tsp freshly ground black pepper
  • •  1/3 cup tahini
  • •  1 large lemon
  • •  1 garlic clove
  • •  1/2 cup packed fresh parsley leaves
  • •  1/4 cup packed fresh cilantro leaves
  • •  1/4 cup cold water
  • •  2 romaine hearts
  • •  1 English cucumber
  • •  2 ripe avocados

Method

  1. Heat the oven

Set a rack in the center of the oven and heat to 425 F. Use a large rimmed sheet pan so the chickpeas can roast in one uncrowded layer.

Look for: The oven is fully heated before the chickpeas go in.

  2. Dry the chickpeas

Drain and rinse the chickpeas, then spread them on a clean kitchen towel and rub until the skins and surfaces feel dry. Pick off any loose skins and let visible moisture evaporate before seasoning.

Look for: The chickpeas feel matte rather than slick, and the towel is no longer wet beneath them.

  3. Season for roasting

Transfer the dried chickpeas to the sheet pan and toss with the olive oil, 1/2 tsp salt, cumin, coriander, and black pepper. Spread them with a little space between pieces so hot air can reach their sides.

Look for: Every chickpea has a light sheen of oil and spice, with no puddle on the pan.

  4. Roast until browned

Roast the chickpeas for about 30 minutes, shaking the pan once halfway through. They are ready when the outside is deep golden, a few skins have split, and a chickpea tastes dry and crisp at the edge.

Look for: The chickpeas have browned patches and sound lightly rattly when the pan is shaken.

  5. Blend the green tahini

While the chickpeas roast, blend the tahini, juice of the lemon, garlic, parsley, cilantro, cold water, and remaining 1/4 tsp salt until smooth and bright green. Add the water gradually; the finished dressing should fall from a spoon in a steady ribbon.

Look for: The herbs are finely blended and the dressing pours easily without looking oily or pasty.

  6. Prepare the greens

Separate, wash, and thoroughly dry the romaine hearts, then slice them into bite-size ribbons. Halve the cucumber lengthwise and cut it into thin half-moons so it stays crisp among the greens.

Look for: The romaine is dry enough that dressing will cling instead of pooling, and the cucumber pieces are thin and crisp.

  7. Slice the avocado

Halve and pit the avocados, then cut the flesh into thick slices just before assembling. Keep the pieces broad so they hold their shape when the salad is served.

Look for: The avocado yields gently to pressure and slices cleanly without turning mushy.

  8. Dress the greens lightly

Put the romaine and cucumber in a wide bowl and toss with enough green tahini to coat them lightly, reserving the rest for serving. The leaves should look glossy but not weighed down by dressing.

Look for: A thin coating clings to the greens, with no thick dressing collecting at the bottom.

  9. Build the salad

Spread the dressed greens on a platter and arrange the avocado slices over them. Add the hot chickpeas last, keeping them mostly on top so their roasted surfaces stay crisp against the cool greens.

Look for: Avocado slices remain intact and the chickpeas are visible rather than buried in the leaves.

  10. Serve with more dressing

Drizzle the salad with a little more green tahini and pass the remaining dressing at the table. Serve promptly while the chickpeas are crisp and the romaine is cold and crunchy.

Look for: The dressing adds a fresh lemon-herb aroma without masking the chickpeas or greens.
