58 min · 6 people sharing

Ingredients

□ 1 1/2 lb boneless, skinless chicken breasts

□ 3/4 cup plain Greek yogurt

□ 1 1/2 tsp kosher salt, divided

□ 1/2 tsp freshly ground black pepper

□ 1 tsp paprika, divided

□ 2 cups cornflakes

□ 1/3 cup finely grated Parmesan cheese

□ 1 tsp garlic powder

□ 1 tbsp neutral oil, for the wire rack

□ 1/3 cup mayonnaise

□ 2 tbsp Dijon mustard

□ 2 tbsp honey

□ 1 tsp fresh lemon juice

Directions

1. Heat oven to 425 F; set an oiled wire rack in a sheet pan. Whisk dip ingredients and chill.

2. Cut chicken into 1- to 1 1/4-inch bites; coat in seasoned yogurt and chill 15 minutes.

3. Mix crushed cornflakes, Parmesan, garlic, paprika, and salt. Drain excess yogurt, coat bites, and space on rack.

4. Bake 8 minutes, turn, then bake 5–8 minutes more until crisp and 165 F inside.

5. Rest uncovered 2 minutes; serve hot with chilled honey mustard.

Cook’s note: Leave gaps between the bites so hot air can crisp every side.
