Creamy Caper Chicken Fettuccine

A quick skillet pasta pairs juicy seared chicken with a smooth Parmesan cream sauce, brightened by capers, lemon, and a little starchy pasta water.
Fettuccine coated in creamy Parmesan sauce with chicken strips, capers, parsley, and lemon zest.

This fettuccine borrows the comfort of Alfredo while letting capers and lemon keep each bite lively. The sauce comes together while the pasta cooks, so the whole meal stays close to its 35-minute target.

The key is gentle heat: cream and Parmesan need only enough warmth to combine, while reserved pasta water supplies a smooth, adjustable finish.

Start with dry, even chicken

Cutting the breasts into similarly thick strips gives them a short, predictable sear. Patting the surfaces dry helps them brown quickly, and pulling them from the skillet as soon as they reach 165 F keeps them tender while they rest.

Save the pasta water

The water released from boiling fettuccine contains starch that helps cream and cheese cling to the noodles. Reserve it before draining, then start with a modest splash so the finished sauce remains fluid rather than soupy.

Balance the briny bite

Rinsing the capers softens their sharpest saltiness without removing their distinct tang. Lemon zest and juice add fragrance and acidity, so taste the sauce before seasoning further.

Keep cream and cheese smooth

Garlic needs only a brief turn in the pan; browning it can make the sauce taste bitter. Once the cream is gently warm, move the skillet off the burner to whisk in Parmesan, then use low heat only if the pasta needs warming.

Glossy cream sauce clings to fettuccine beside capers, grated Parmesan, and tender chicken.
Capers, lemon, and grated Parmesan brighten the creamy coating on the fettuccine.

Serve while glossy

Fold the chicken and its resting juices back into the pasta at the end, just long enough to warm through. Serve immediately with parsley and extra Parmesan; if the noodles tighten while waiting, loosen them with a spoonful of warm pasta water.

Creamy Caper Chicken Fettuccine

4 servings
35 minutes total

Ingredients

  • •  12 oz fettuccine
  • •  1 lb boneless, skinless chicken breasts
  • •  1 tsp kosher salt, divided
  • •  1/2 tsp freshly ground black pepper
  • •  2 tbsp olive oil, divided
  • •  2 tbsp unsalted butter
  • •  3 garlic cloves, finely minced
  • •  1/2 cup heavy cream
  • •  1/2 cup finely grated Parmesan cheese
  • •  2 tbsp capers, drained and rinsed
  • •  1/2 tsp finely grated lemon zest
  • •  1 tbsp fresh lemon juice
  • •  2 tbsp chopped fresh flat-leaf parsley
  • •  1/4 tsp red pepper flakes
  • •  1 cup reserved pasta cooking water

Method

  1. Bring water to a boil

Bring a large pot of well-salted water to a boil while you prepare the chicken; keep a measuring cup beside the pot to reserve pasta water before draining.

Look for: Steady large bubbles break across the surface.

  2. Season the chicken

Slice chicken breasts crosswise into strips about 1/2 inch thick, pat dry, and season evenly with 3/4 tsp salt and the black pepper so the pieces brown instead of steam.

Look for: Strips are similar in thickness and have no wet patches.

  3. Sear in batches

Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Sear chicken in a single layer, in batches if needed, about 2 minutes per side until golden and just cooked through; transfer to a plate to rest.

Look for: Chicken releases from the pan when browned and reaches 165 F at the thickest piece.

  4. Cook the pasta

Drop fettuccine into the boiling water and cook until just al dente according to the package timing. Before draining, reserve 1 cup of the starchy water; drain the pasta without rinsing.

Look for: Pasta bends easily but still has a slight firm bite at the center.

  5. Start the cream sauce

Reduce the skillet heat to medium-low and add the remaining olive oil, butter, and garlic. Stir for about 30 seconds until fragrant but not browned, then pour in the cream and bring it just to a gentle simmer.

Look for: Garlic smells sweet and the cream shows small bubbles only at the edge.

  6. Melt in cheese and capers

Take the skillet off the heat and whisk in Parmesan in small handfuls until smooth. Stir in capers, lemon zest, lemon juice, red pepper flakes, and the remaining 1/4 tsp salt; taste before adding more salt because capers are briny.

Look for: Sauce is glossy and the capers are distributed throughout.

  7. Toss until silky

Add drained fettuccine and 1/3 cup reserved pasta water to the skillet. Toss continuously until the sauce coats the ribbons; add more pasta water a tablespoon or two at a time if it looks tight, since it will thicken as it stands.

Look for: Sauce clings in a thin sheen and gathers lightly at the bottom rather than forming a heavy paste.

  8. Return chicken and serve

Slice any larger chicken strips in half, return them and their resting juices to the pan, and toss just until warmed through. Fold in parsley and serve immediately with extra Parmesan, keeping the skillet off the heat so the cream stays smooth.

Look for: Chicken is juicy and warm, and the sauce remains glossy rather than oily.
