Classic Three-Bean Salad

Crisp green and wax beans meet kidney beans and thin red onion in a sharp, lightly sweet cider dressing made for picnics.
Green and wax beans, kidney beans, and red onion are lightly coated with cider dressing in a serving bowl.

Three-bean salad gets its character from contrast: tender-crisp fresh beans, creamy kidney beans, and a bright cider dressing. A quick blanch keeps the green and wax beans vivid, while a covered chill lets the vinegar season everything.

Blanch to a crisp snap

A brief boil softens the green and wax beans just enough for a salad, while the ice bath halts cooking at once. Drain and blot them thoroughly so the vinegar dressing stays concentrated rather than watery.

Keep the cider dressing bright

Apple cider vinegar does the bright work, balanced with only a little sugar and olive oil. Whisk until the sugar dissolves; the loose, tangy dressing should cling lightly without coating the beans in a sweet glaze.

Give the salad time to chill

The covered rest lets the vinegar reach the centers of the beans and gives thinly sliced onion time to mellow. A couple of hours is the useful minimum, while an overnight chill makes the salad an easy picnic make-ahead.

Toss just before serving

The dressing settles at the bottom as the salad chills, so lift from the bowl’s base when tossing. A short pause out of the refrigerator takes off the chill without warming the beans too much, and parsley gives the finish a fresh note.

Crisp green and wax beans, red kidney beans, red onion, and parsley show through the light dressing.

Classic Three-Bean Salad

8 servings
155 minutes total

Ingredients

  • •  12 oz fresh green beans, trimmed
  • •  12 oz fresh wax beans, trimmed
  • •  1 (15 oz) can red kidney beans, drained and rinsed
  • •  1/2 medium red onion, thinly sliced
  • •  1/3 cup apple cider vinegar
  • •  2 tbsp extra-virgin olive oil
  • •  1 tbsp granulated sugar
  • •  1 tsp vegan Dijon mustard
  • •  1 tsp kosher salt
  • •  1/4 tsp freshly ground black pepper
  • •  2 tbsp chopped fresh flat-leaf parsley

Method

  1. Prepare the beans and onion

Trim the stem ends from the green and wax beans, thinly slice the red onion, and set out a large bowl of ice water. Drain and rinse the kidney beans, then leave them to drain while you work.

Look for: Bean ends are clean, onion slices are thin and even, and the kidney beans are rinsed and draining.

  2. Heat the blanching water

Bring a large pot of unsalted water to a full boil while the bowl of ice water sits beside the stove; keep a colander ready so the beans can be cooled immediately.

Look for: Water is at a steady rolling boil and the ice water is within arm’s reach.

  3. Blanch the fresh beans

Add the trimmed green and wax beans to the boiling water and blanch for 3 minutes, tasting one at the thickest end; they should bend slightly but still snap when bitten.

Look for: Beans are vivid green and yellow, slightly flexible but still crisp, never floppy.

  4. Stop the cooking

Transfer the beans straight into the ice water for 2 minutes to stop cooking and set their color, then drain very well and blot dry; excess water would dilute the vinaigrette.

Look for: Beans are cool through, bright, and well drained with no water collecting underneath.

  5. Whisk the bright dressing

In a large serving bowl, whisk the cider vinegar, olive oil, sugar, Dijon mustard, salt, and black pepper until the sugar dissolves; the dressing should taste sharply tangy, not thick or syrupy.

Look for: The dressing stays loose and vinegar-forward, with the sugar dissolved and no syrupy texture.

  6. Dress all three beans

Add the drained kidney beans, blanched green and wax beans, and sliced red onion to the bowl. Pour in the dressing and turn gently until everything has a light even coat without breaking the kidney beans.

Look for: All three kinds of beans and the onion are lightly coated, with the kidney beans mostly intact.

  7. Chill for flavor

Cover and refrigerate the salad for at least 2 hours, or up to 24 hours, so the vinegar seasons the beans while the onion softens; chill it in the covered serving bowl.

Look for: The salad has rested covered in the dressing for at least 2 hours and the onion has begun to mellow.

  8. Toss and serve

Take the salad from the refrigerator 10 minutes before serving; toss from the bottom to redistribute the dressing, fold in the parsley, and serve cool. Briefly toss again just before serving if dressing has pooled.

Look for: Dressing is redistributed from the bottom, parsley is scattered through the salad, and the beans are cool and lightly coated.
