Classic New York-Style Cheesecake
460 min · 8 servings
Ingredients
□ 1 3/4 cups graham cracker crumbs
□ 3/4 cup granulated sugar, divided
□ 6 tbsp unsalted butter, melted
□ 24 oz full-fat cream cheese, room temperature
□ 3/4 cup full-fat sour cream, room temperature
□ 3 large eggs, room temperature
□ 2 tsp vanilla extract
□ 1 tsp finely grated lemon zest
□ 1/4 tsp kosher salt, divided
□ 2 cups mixed berries
□ 1 tbsp lemon juice
□ 1 tsp cornstarch
Directions
1. Heat oven to 325 F. Press the crumb crust into a 9-inch springform and bake until set.
2. Cool the crust. Mix cream cheese, sugar, vanilla, zest, and salt on low until smooth, without aerating.
3. Blend in sour cream and eggs on low, then bake 55 minutes at 325 F; a water bath below is optional.
4. Cool in the switched-off oven, then at room temperature. Chill at least 240 minutes until dense.
5. Cook berries, lemon juice, cornstarch, and sugar until glossy. Cut into 8 slices and serve sauce alongside.
Cook’s note: Room-temperature ingredients, low-speed mixing, and gradual cooling prevent most cracks.
