Classic Key Lime Pie

290 min · 8 slices

Ingredients

□ 1 1/2 cups finely ground graham cracker crumbs

□ 3 tbsp granulated sugar

□ 6 tbsp unsalted butter, melted

□ 4 large egg yolks

□ 1 14-oz can sweetened condensed milk

□

□ 1 tbsp finely grated lime zest, divided

□ 1 cup cold heavy cream

□ 1 tbsp confectioners' sugar

Directions

1. Heat oven to 350 F. Mix crumbs, sugar, and butter; press into a 9-inch pie plate.

2. Bake crust 10 minutes. Whisk yolks, condensed milk, juice, and zest until smooth.

3. Fill crust and bake 15 minutes, leaving a slow center wobble. Cool, then chill 240 minutes until firm.

4. Whip cream and confectioners' sugar to soft peaks. Slice cold pie; add cream and reserved zest.

Cook’s note: Use Persian lime juice in the same amount if needed, and keep the pie cold for clean slices.
