Cinnamon-Raisin Baked Oatmeal Squares

78 min · 6 squares

Ingredients

□ 2 cups old-fashioned rolled oats

□ 1/2 cup raisins

□ 2 large eggs

□ 1 3/4 cups milk

□ 1/3 cup packed brown sugar

□ 1 tsp ground cinnamon

□ 1 tsp baking powder

□ 3 tbsp unsalted butter

□ 1 tsp vanilla extract

□ 1/2 tsp fine salt

Directions

1. Heat oven to 350 F and butter an 8-inch pan. Stir oats, raisins, cinnamon, baking powder, and salt together.

2. Whisk eggs, milk, brown sugar, vanilla, and melted butter separately; fold into the oats just until moistened.

3. Rest mixture 10 minutes, then spread evenly in the greased pan.

4. Bake 35 to 40 minutes, starting checks at 35; remove when the center is just set and top lightly golden.

5. Rest 15 minutes before cutting. Cool, cover, and refrigerate up to 4 days; reheat gently at 300 F or in a microwave.

Cook’s note: Pull the pan as soon as the middle holds together; a moist surface is the cue to stop baking.
