Chipotle-Glazed Chicken Bites with Rice
45 min · 4 servings
Ingredients
□ 1 1/2 cups long-grain white rice
□ 3 cups water
□ 1 1/4 tsp kosher salt, divided
□ 1 1/2 lb boneless, skinless chicken thighs, cut into bite-size pieces
□ 2 tbsp neutral oil, divided
□ 2 chipotle peppers in adobo, finely chopped
□ 2 tbsp honey
□ 1 lime, juiced
□ 2 garlic cloves, finely grated
□ 12 oz green beans, trimmed
Directions
1. Rinse white rice, then simmer it with water and salt until tender.
2. Mix chipotle, honey, lime, garlic, oil, and salt into a glaze; season chicken bites.
3. Sear chicken, then add the glaze and cook until sticky and fully cooked.
4. Cook green beans until crisp-tender. Fluff rice, rest chicken, and serve in bowls.
Cook’s note: Let the glaze bubble around the chicken so it thickens without scorching.
