Chef Salad

A chilled platter keeps the classic deli toppings distinct, while a thick Dijon dressing adds creamy tang without softening the greens.

Chef salad works best when its components are cold, dry, and easy to see. A wide platter lets the ham, turkey, Swiss, and vegetables stay in separate portions, so everyone can build a balanced forkful.

Start with dry, cold leaves

Iceberg contributes a clean crunch, while romaine adds leafy structure. Spinning both thoroughly dry and chilling them before assembly prevents trapped water from thinning the dressing and helps the platter stay crisp.

Cook the eggs gently

The covered off-heat rest sets the eggs without keeping them at a hard boil. An ice bath stops the cooking quickly, then refrigeration brings them to the same cool temperature as the greens and toppings.

Separate bowls and small piles of sliced deli meats, Swiss, vegetables, and eggs are ready to arrange over dry chilled lettuce.
The ham, turkey, Swiss, and vegetables wait in separate piles before the platter is assembled.

Keep the platter organized

Lay the deli strips and sliced vegetables in distinct bands over the greens rather than tossing everything together. The tidy arrangement protects the ingredients' individual textures and makes the salad feel substantial from edge to edge.

Dress at the table

Mayonnaise and sour cream make a creamy base, while Dijon and lemon sharpen it and a little honey rounds the edges. Keep the dressing alongside the salad until serving; if it seems too thick, whisk in water a few drops at a time.

Assemble close to mealtime

The eggs and dressing can be prepared ahead, and the washed greens can wait covered in the refrigerator once fully dry. Arrange the platter shortly before serving and keep the dressing off the leaves until each portion is ready to eat.

Chef Salad

4 main-course servings
55 minutes total

Ingredients

  • •  1 medium head iceberg lettuce, cored and torn into bite-size pieces
  • •  1 small romaine heart, chopped into bite-size pieces
  • •  6 oz deli ham, cut into 1/4-inch strips
  • •  6 oz roasted turkey breast, cut into 1/4-inch strips
  • •  4 oz Swiss cheese, cut into 1/4-inch strips
  • •  3 large eggs
  • •  1/2 English cucumber, thinly sliced into half-moons
  • •  1 cup cherry tomatoes, halved
  • •  4 radishes, trimmed and thinly sliced
  • •  1/2 cup mayonnaise
  • •  1/4 cup sour cream
  • •  2 tbsp Dijon mustard
  • •  1 tbsp lemon juice
  • •  1 tbsp cold water
  • •  1 tsp honey
  • •  1/4 tsp kosher salt
  • •  1/8 tsp freshly ground black pepper
  • •  2 tbsp finely sliced chives

Method

  1. Hard-cook the eggs

Place the eggs in a small saucepan and cover with cold water by 1 inch. Bring to a full boil over high heat, cover, turn off the heat, and let stand for 10 minutes; the whites should be set and the yolks fully firm.

Look for: The water reaches a full rolling boil before the covered pan comes off the heat.

  2. Cool and chill the eggs

Transfer the eggs to a bowl of ice water for 10 minutes, then peel and refrigerate them until assembly. Cooling them promptly stops carryover cooking and keeps the salad ingredients cold.

Look for: The shells release cleanly and the eggs feel cold before they go into the refrigerator.

  3. Dry and chill the greens

Rinse the iceberg and romaine, spin them very dry, and refrigerate them in a covered bowl for at least 15 minutes. Dry leaves hold the creamy dressing instead of watering it down, and chilling helps them stay crisp.

Look for: No droplets remain on the leaves or in the bottom of the salad spinner.

  4. Cut the toppings

Slice the ham, turkey, and Swiss into even 1/4-inch strips, keeping each in its own small pile. Slice the cucumber and radishes thinly, halve the tomatoes, and keep the vegetables separate so the finished platter stays tidy.

Look for: The deli strips are similar in length and remain grouped by ingredient.

  5. Whisk the Dijon dressing

Whisk the mayonnaise, sour cream, Dijon, lemon juice, water, honey, salt, and pepper in a bowl until smooth. The dressing should fall from the whisk in a thick ribbon; add a few drops of water only if needed to loosen it.

Look for: The dressing is creamy and pourable, with no streaks of sour cream or mustard.

  6. Arrange the greens

Spread the chilled, dry iceberg and romaine over a large chilled platter or shallow bowl. Keep the layer loose rather than compressed so cold air can circulate and the leaves remain crisp.

Look for: The greens form an even bed with no visible pooling liquid.

  7. Add distinct topping portions

Arrange the ham, turkey, and Swiss in three separate bands over the greens. Add the cucumber, tomatoes, and radishes in their own tidy sections, leaving enough lettuce visible around each portion.

Look for: Each deli ingredient and vegetable is clearly visible in its own portion.

  8. Finish and serve cold

Quarter the chilled eggs and nestle them around the platter, then scatter the chives over the greens and toppings. Serve immediately with the dressing on the side, or drizzle lightly just before eating so the lettuce does not wilt.

Look for: The eggs are cold and firm, and the greens remain crisp up to serving.
