Buttery Garlic Green Beans

25 min · 4 servings

Ingredients

□ 1 lb fresh green beans, trimmed

□ 3 tbsp unsalted butter

□ 3 garlic cloves, finely minced

□ 1/2 tsp kosher salt

□ 1/4 tsp freshly ground black pepper

□ 1 tsp finely grated lemon zest

□ 1 tbsp fresh lemon juice

□ 2 tbsp water

Directions

1. Trim and dry the beans; mince garlic, zest the lemon, and squeeze its juice before heating the skillet.

2. Steam the salted beans until vivid green, then uncover and toss until the water evaporates and the centers stay snappy.

3. Melt butter over medium-low without browning; stir in garlic until fragrant and pale, then coat the beans.

4. Toss with pepper, zest, and lemon juice; taste, transfer with the garlic butter, and serve promptly.

Cook’s note: Keep the garlic pale and check the beans as they steam so they stay crisp-tender.
