Breakfast Burrito
Browned sausage and crisp potatoes meet soft scrambled eggs, cheddar, and a measured spoonful of salsa inside warm flour tortillas that toast closed for a hearty brunch.

Ingredients
12 oz bulk breakfast sausage
1 lb Yukon Gold potatoes, cut into 1/4-inch dice
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1/2 tsp smoked paprika
1 tbsp neutral oil
8 large eggs
2 tbsp whole milk
1 tbsp unsalted butter
1 cup shredded sharp cheddar
1/4 cup thick salsa, drained if loose
4 large flour tortillas, 10-inch
Equipment
Large skillet · Nonstick skillet · Wooden spoon · Whisk · Clean kitchen towel · Paper towels
Dice and brown
01. Cut potatoes into even small cubes so they soften and brown together.
02. Brown sausage in a hot skillet, breaking it into small crumbles; transfer when no pink remains.
Render and crisp
03. Drain excess sausage fat, leaving only a thin coating in the pan for the potatoes.
04. Season potatoes with salt, pepper, and paprika, then cook in one layer until tender and crisp-edged.
Scramble the eggs
05. Whisk eggs with milk and a pinch of salt; stir in butter over low heat and stop while the curds are glossy.
Warm and fill
06. Warm tortillas in a dry skillet until flexible, then keep them covered so the edges stay pliable.
07. Toss sausage with potatoes off the heat; portion with eggs, cheddar, and a little thick salsa, keeping a clear border.
Fold and toast
08. Fold both sides inward, tuck the bottom edge beneath the filling, and roll snugly away from you.
09. Toast seam-side down in a dry skillet until the seam seals and the outside has golden patches.
