Crisp Pork and Garlic Stone-Baked Pizza

102 min · 4 servings

Ingredients

□ 3/4 cup warm water

□ 2 tbsp extra-virgin olive oil, divided

□ 2 1/4 cups bread flour

□ 1 tsp instant yeast

□ 1 1/2 tsp kosher salt, divided

□ 1 tsp Italian seasoning

□ 6 garlic cloves, cut into thick chunks, divided

□ 1 cup crushed tomatoes

□ 8 oz ground pork

□ 8 oz low-moisture mozzarella, shredded

Directions

1. Heat a pizza stone on the middle rack at 500 F for 45 minutes.

2. Run water, oil, flour, yeast, and salt through the bread machine's dough cycle.

3. Brown seasoned pork. Cook half the garlic in oil, then simmer it with tomatoes and salt until thickened.

4. Stretch dough to 12 inches; add sauce, pork, raw garlic chunks, and mozzarella.

5. Bake on the stone until blistered and crisp. Rest 2 minutes, then slice.

Cook’s note: A fully heated stone sets the crust before the toppings can make it soggy.
