Beer-Battered Onion Rings

45 min · 6 appetizer servings

Ingredients

□ 2 large sweet onions

□ 1 1/2 cups all-purpose flour, divided

□ 1/3 cup cornstarch

□ 1 tsp baking powder

□ 1 tsp kosher salt, divided

□ 1/2 tsp paprika

□ 1/2 tsp freshly ground black pepper

□ 1 large egg

□ 1 cup cold lager beer

□ 4 to 6 cups neutral high-heat oil, as needed for 1 1/2 to 2 inches in the pot

□ 1/2 cup ranch dressing

□ 1/2 cup ketchup

□ 1 tsp hot sauce

Directions

1. Slice onions into 1/2-inch rings and dry well. Set out both dips and a rack; heat oven to 200 F for short holding.

2. Heat 1 1/2 to 2 inches of oil in a heavy pot to 350 F, no more than halfway full. Make a lightly mixed batter with cold lager.

3. Flour and batter a few rings at a time. Fry 3 or 4 rings for 2 to 3 minutes, turning once; return oil to 350 F between batches.

4. Drain on a wire rack, salt while hot, and hold briefly in the warm oven. Serve promptly with ranch and spicy ketchup.

Cook’s note: Keep rings in a single layer on a rack so steam does not soften their crisp coating.
