Beef Hamburg Steaks with Curry Rice and Crispy Onions
A skillet supper pairs soft Japanese-style beef hamburg steaks with lightly curried short-grain rice, scallion yogurt, and crisp shallots.

These unbreaded beef patties are gently mixed with grated onion and panko, then browned and finished under a lid. Mild curry rice gives them a fragrant base, while cool scallion yogurt and crisp shallots add contrast at the end.
Keep the curry rice gentle
Blooming the curry powder briefly in butter softens its raw edge and lets the spice perfume the rice without turning the bowl into a heavy curry. Rinse the grains first, then keep the lid on during the simmer and rest so they steam evenly.
Mix for a soft center
Grated onion and panko help the ground beef stay moist, while a light hand keeps the texture tender. Shaping the patties to an even thickness and pressing a shallow dimple into each center helps them cook evenly in the skillet.

Use the skillet in sequence
Fry the shallots first so they can drain and crisp while the patties cook. Leaving a measured spoonful of the flavored oil in the pan gives the beef a clean sear without making the finished bowl greasy.
Build contrast in the bowl
The yogurt, scallion, and rice vinegar make a cool, tangy topping that cuts through the savory beef. Add the shallots just before serving so they stay crisp against the tender rice and patties.

Beef Hamburg Steaks with Curry Rice and Crispy Onions
Ingredients
- • 1 1/2 cups Japanese short-grain rice
- • 2 cups water, divided
- • 1 tbsp unsalted butter
- • 1 tbsp mild curry powder
- • 3/4 tsp kosher salt, divided
- • 1 1/2 lb 85% lean ground beef
- • 1/3 cup panko
- • 1 large egg
- • 1 medium yellow onion, finely grated
- • 1 tbsp whole milk
- • 1 tbsp soy sauce
- • 1/2 tsp freshly ground black pepper
- • 1/3 cup neutral oil
- • 1 large shallot, thinly sliced
- • 3/4 cup plain whole-milk Greek yogurt
- • 2 scallions, thinly sliced
- • 1 tsp rice vinegar
Method
Rinse the rice
Rinse the short-grain rice in a fine-mesh strainer, swishing it gently, until the water runs mostly clear; drain it well while you prepare the other ingredients.
Look for: The rinse water is only faintly cloudy and the rice is no longer dripping.
Start the curry rice
Melt the butter in a small saucepan over medium-low heat, stir in the curry powder for 30 seconds, then add the drained rice, 1 3/4 cups water, and 1/2 tsp salt. Bring to a simmer, cover, cook on low for 15 minutes, then let stand covered off heat for 10 minutes.
Look for: The curry smells fragrant without darkening, and the rice finishes tender with no water visible.
Mix the scallion yogurt
Stir the Greek yogurt, sliced scallions, and rice vinegar together in a small bowl; keep it cool while the patties cook so the topping stays fresh and tangy.
Look for: The scallions are evenly distributed and the yogurt tastes bright and lightly sharp.
Shape the hamburg steaks
Combine the ground beef, panko, egg, grated yellow onion, milk, soy sauce, pepper, and 1/4 tsp salt with a light touch. Shape into four even oval patties about 3/4 inch thick, pressing a shallow dimple into each center.
Look for: The mixture holds together but still feels soft; each patty has an even thickness and shallow center.
Fry the shallots
Heat the neutral oil in a 12-inch skillet to 325 F. Fry the sliced shallot in two batches, stirring, until pale golden and crisp, about 2 minutes per batch; drain on paper towels and leave 1 tbsp oil in the skillet.
Look for: The thin shallot slices bubble steadily and turn pale gold; they deepen slightly as they cool.
Brown the patties
Raise the skillet to medium-high and brown the patties in two uncrowded batches, about 3 minutes per side, until a deep crust forms. Return all patties to the skillet in one layer if they fit.
Look for: The first side releases without tearing and has a deep brown crust before turning.
Cook through gently
Add the remaining 1/4 cup water to the skillet and cover. Reduce heat to medium-low and steam the patties for 4 to 6 minutes, checking the thickest one for 160 F; uncover if needed to evaporate excess liquid, then rest the patties for 3 minutes.
Look for: The center reaches 160 F and feels springy rather than soft; the brief rest lets the juices settle.
Plate and finish
Fluff the curry rice and divide it among four shallow bowls. Set a hamburg steak over each portion, spoon on scallion yogurt, and finish with the crisp shallots just before serving.
Look for: The warm rice supports each browned patty, while the cool yogurt and crisp shallots remain distinct on top.
