Angel Food Cake

155 min · 12 servings

Ingredients

□ 12 large egg whites, room temperature

□ 1 1/2 cups granulated sugar, divided

□ 1 cup cake flour

□ 1 1/2 tsp cream of tartar

□ 1/4 tsp fine salt

□ 1 tsp vanilla extract

□ 2 cups fresh berries

□ 1 tbsp confectioners' sugar, optional for serving

Directions

1. Heat oven to 350 F. Keep the tube pan clean and ungreased; separate the whites without yolk.

2. Sift flour with half the sugar. Foam whites, add tartar and salt, then beat in remaining sugar to glossy peaks.

3. Fold in vanilla and flour gently. Bake at 350 F until golden, dry-cracked, and springy.

4. Invert immediately and cool fully. Loosen the cake, then serve plain or with berries and confectioners' sugar.

Cook’s note: Grease-free equipment and upside-down cooling help the foam-built cake keep its height.
